In the magical fall atmosphere on the lake, local wineries offer Novello tastes with food and beverage stands: risotto, bruschetta with local olive oil, cheese, the local fogassa and chestnuts; they all perfectly match with a glass of Novello. Elegant and vibrant, it’s deliberately unoaked so you can expect fresh red-fruit flavours with notes of violet and white pepper.

According to the 2018 procedural guideline the Corvina variety represents between 35% and 95 % of grapes used for production. Thanks to the measures taken to reclaim the lands, they started to flourish; the monks indeed were able to manage the viticulture and vinification process thanks to the donations they received from the noble families. Despite the very gentle extraction here, those fresh red fruit notes are in abundance but lifted even further by a lovely freshness thanks to the coolness of the nights during the growing season. The Bardolino DOC can also be found in its “Novello” version; like all young wines, it is produced through carbonic maceration (at least 85%) and it is bottled within the 31th of December of the year.But being natural winemakers, Alessia and Stefano are less concerned with what conventional winemakers are doing in the area and instead have set out to show what the indigenous grapes and Bardolino terroir are capable of when allowed to express themselves naturally. It was Nino who decided to move the production in the 1950s from the small winery in the historic centre of Bardolino to its present location,with more space and improved practicality, in the hills above the village with a spectacular view of Lake Garda. This refreshing, crunchy, cherry and raspberry-scented red is great lightly chilled – imagine you’re sipping it on Lake Garda. This type of wine must be matured for a minimum of one year and has to have an alcohol content of at least 12.

Attractive aromas on the nose of fresh strawberries and raspberries, delicately weighted on the palate with a super fresh finish. The Bardolino in its entirety is a versatile wine: it matches with all kind of dishes, from the starter to the dessert, from the Italian cooking to the exotic one; there is a huge variety of combinations.The love for wine they have in common culminates in an annual festival, the Festa dell’Uva e del Vino, which takes place every year from the end of September to the beginning of October and attracts over 100 000 visitors to the idyllic Bardolino region. Cool nights at this vineyard give this rosé a zippy freshness, just what you want on a hot summer's afternoon! On the lake side, the Bardolino accompanies local dishes made with lake fish: it is divine with risotto with tench, sardines, grilled lavaret and even with fried fish!

Different grape varieties are used, although the most important one is the Corvina Veronese, a native variety of Bardolino, characterized by an excellent capability to adjust to the different soils of the Verona shore and hinterland. In addition other grapes used in a lower percentages are the Molinara with a 10% that can achieve a 20% and the Negrara usable at a maximum of 10%. The wines are made by Allegrini using fruit sourced from outside of their estate vineyards and have a similar stamp of quality that sets them apart from most of the Veronese wines produced at this level.

It is great also with white and red meats in humid or grilled, with spit pigeon (local specialty) and also with rich and structured fish soups.

The rich soil diversity, exquisite climate, and natural conditions of the place inspired the family to set up its company right in that valley. The main variety used in the respect of the ancient local production and according to the technical policies of production, subscribed and nationally approved in 1968 are : the Corvina vine which is used between a 35% and a 65% and the Rondinella Classica of Veneto used between a 10% and a 40%. Gaetano Zeni, referred to as Nino by everyone, was the real innovator of the modern era of the winery: a number of small and big changes initiated by him lifted the winery to its level of today.
